Brand Awareness, Cocktail Creation and development for the botanist gin cold infuser with foraged ingredients sourced locally.
The Botanist is a gin of layered complexity; a progressive exploration of the botanical heritage of The Isle of Islay. With 22 hand-foraged local botanicals, this first and only Islay dry gin is a rare expression of the heart and soul of the remote Scottish island.
We created recipes and cocktails using their new cold infuser from the botanist gin with foraged ingredients sourced locally.

The Botanist Hunt Cocktail
First place winning cocktail in the UK
50ml The botanist infusion (soy, shiitake, pineapple weed, blueberries)
20ml Hawthorn, thyme and honey infusion
10ml Lemon juice
Garnish with edible flower, micro cress, mushroom jelly

Wild Shiitake Mushroom Hydration
50gr Dried shiitake mushrooms
20ml Sweet soy sauce
Pinch salt
230ml Distilled boiling water
Mix and let it sit for 8 hours until cold to make the consommé

Wild Shiitake Mushroom Jelly
200ml of the hydrated shiitake mushroom consommé
10 Vegan gelatine leaves
Mix the gelatine in cold iced water for 5 min
Mix with the consommé, heat up until gelatine is dissolved and let it cool in the fridge

Hydrated Wild Shiitake Mushrooms
Add 25gr of the mushrooms to the infuser and 10 pieces of crushed blueberries and let the Botanist infused pineapple weed infusion pass through overnight

Pineapple Weed The Botanist Infusion
30gr of crushed pineapple weed
700ml The Botanist gin
Cook for 4 hours at 60 degrees

Hawthorn infusion
60gr Hawthorn berries
2gr Thyme leaves
200ml Local honey
Cook for 120 min at 70 degrees
